Green Beauty Bars

Makes approx. 6 bars

Ingredients:

1/2 cup raw pumpkin seeds

1/2 cup raw sunflower seeds

1/2 cup unsweetened shredded coconut

1 ripe banana

2 dates, pitted

1/2 teaspoon chlorella*

1/4 teaspoon Himalayan salt

1/4 teaspoon pearl powder**

Instructions:

1. Line a baking sheet with parchment paper.

2. In a food processor, combine the pumpkin seeds and sunflower seeds and pulse until they form a coarse meal. Transfer the mixture to a medium bow. Add the banana and date to the food processor (no need to clean it out first) and pulse until just about smooth. With the banana-date mixture still in the food processor, add the seed mixture, coconut, chlorella, pearl powder and salt and pulse a few times to combine.

3. Using clean hands, form the mixture into 1 1/2 by 4-inch bars, about 1/2 inch thick and place on parchment paper. Transfer the bars to the freezer for 15 minutes or until firm. Store the bars in the fridge for up to 1 week. (These taste great the day of but I really like them the next day).

*This ingredient is actually very easy to find. Health food stores (such as Trader Joe's, Healthy Living, Wegman's or Whole Foods) will have this in their bulk section. You can also find this on at nuts.com.

** I add pearl powder as it is great for hair, skin and nails. I source mine from Moon Juice.
